Death by Oreo Cupcakes

As the name implies, these chocolate cupcakes are to die for. At first glance, they look like a yummy cupcake with a cookies and cream type icing. It’s when you take the first bite you’re amazed. Big chunks of Oreos are in every bite. A whole Oreo cookie at the bottom of the cupcake is a bonus. The cream cheese frosting is brought to a whole new level with finely chopped Oreos incorporated into the creamy frosting. Super easy to make, these cupcakes may become your signature party desert!
Ingredients
- 1 pkg regular size Oreos, family-size package (you’ll need 48 cookies)
- 1 pkg mini Oreos, for decoration
- 1 pkg chocolate cake mix/ mix according to directions on box
- 8 oz cream cheese, room temperature
- 8 Tbsp butter, room temperature
- 3 3/4 c powdered sugar
- 1 tsp vanilla extract
